Ingredients
For the Lemon Butter Salmon & Shrimp
1 salmon fillet (about 6 oz)
6–8 large shrimp, peeled and deveined
2 tablespoons butter
1 tablespoon olive oil
2 garlic cloves, minced
1 lemon, thinly sliced (plus extra for juice)
1 tablespoon fresh parsley, chopped
Salt and black pepper, to taste
½ teaspoon paprika (optional, for color)
For the Garlic Mashed Potatoes
2 large russet or red potatoes, peeled and diced
2 tablespoons butter
¼ cup heavy cream or milk
2 garlic cloves, minced
Salt and black pepper, to taste
Optional: chopped parsley or chives for garnish
For the Sautéed Green Beans
1 cup fresh green beans, trimmed
1 tablespoon olive oil or butter
1 garlic clove, minced
Salt and black pepper, to taste
Instructions

  1. Prepare the Garlic Mashed Potatoes
    Bring a pot of salted water to a boil. Add the diced potatoes and cook for 15–20 minutes until fork-tender. Drain the potatoes and return them to the pot. Mash with butter, minced garlic, and cream or milk until smooth and creamy. Season with salt and pepper. Cover and keep warm.
  2. Cook the Green Beans
    Heat olive oil or butter in a skillet over medium heat. Add the green beans and sauté for 5–7 minutes until crisp-tender. Add the minced garlic during the last 2 minutes of cooking. Season with salt and pepper, then set aside.
  3. Sear the Salmon
    Pat the salmon fillet dry and season with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat. Place the salmon skin-side down and sear for 4–5 minutes until the skin is crispy. Flip carefully and cook for another 3–4 minutes until the salmon is cooked through. Remove from the pan and set aside.
  4. Cook the Shrimp and Lemon Butter Sauce
    Using the same skillet, melt the butter over medium heat. Add the minced garlic and lemon slices and sauté for 1–2 minutes until fragrant. Add the shrimp and cook for 2–3 minutes per side until pink and fully cooked. Squeeze fresh lemon juice into the sauce and sprinkle with chopped parsley.
  5. Assemble and Serve
    Spoon a portion of garlic mashed potatoes onto a plate and arrange the shrimp over or beside them. Place the salmon fillet next to the potatoes and garnish with lemon slices. Add the sautéed green beans on the side. Drizzle some of the lemon-butter sauce over the salmon and shrimp for extra flavor.
